This Keto Red Coleslaw is a lifesaver if I failed to plan our meals for the week.
Simply buy the washed packets from Woolies and add the rest of the ingredients and voila – there’s your side!
- 1 packets washed Coleslaw white and red mixed 350g each
- 1/2 small Red Pepper (or green or yellow) deseeded & sliced thinly (optional)
- 1/4 cup fresh Coriander chopped
- 1/2 cup Spring Onions, chopped
- 1/4 cup Carb smart Mayonnaise 100g
- 3 tbsp Apple Cider Vinegar
- 1 tsp Sesame oil
- 1 tbsp Dijon Mustard
- Pink Himalayan Salt & Pepper
- Mix the cabbage, red pepper, coriander, spring onions together.
- Whisk the mayo, vinegar, oils and mustard together and mix well with the coleslaw.
