This Keto Red Coleslaw is a lifesaver if I failed to plan our meals for the week.

Simply buy the washed packets from Woolies and add the rest of the ingredients and voila – there’s your side!

Ingredients

  • 1 packets washed Coleslaw white and red mixed 350g each
  • 1/2 small Red Pepper (or green or yellow) deseeded & sliced thinly (optional)
  • 1/4 cup fresh Coriander chopped
  • 1/2 cup Spring Onions, chopped
  • 1/4 cup Carb smart Mayonnaise 100g
  • 3 tbsp Apple Cider Vinegar
  • 1 tsp Sesame oil
  • 1 tbsp Dijon Mustard
  • Pink Himalayan Salt & Pepper

Instructions

  • Mix the cabbage, red pepper, coriander, spring onions together.
  • Whisk the mayo, vinegar, oils and mustard together and mix well with the coleslaw.

Notes

This cabbage lasts for several days in the fridge. Make a batch at the beginning of the week and add to any meal. I use the washed coleslaw from Woolies. You can buy a whole cabbage and even the small red ones and shred the cabbage yourself too.
